This past weekend was my birthday and after the usually celebrations and excess; it is now time to get back on the frugal wagon. I have not really fallen off the wagon but have been spending a bit more here and there which of course eventually bites you on the bum. So this week is rice and beans with a bit of extras.
Monday – Birthday celebrations still happening – beloved taking me out. Curry yum!
Tuesday – Slow cooker lemon roast chicken with couscous
Wednesday – Mexican Pulled Pork in the slow cooker served with black beans and yellow rice.
Thursday – Cold chicken salad – maybe Coronation Chicken to make it fancy.
Friday – Leftover chicken burrittos
Saturday – Making slow cooker chicken stock to make mushroom risotto
Sunday – Grilled goat’s cheese salad
I think I need some new recipes. I will hit the cookery books to hopefully wow you next week.
