This week I am on the quick but healthy cooking thing again. I seem to be extra lean on time since taking up a new freelance position. Watch out for a new post about my unorthodox way of dealing with it.
Monday – pan fried duck breasts in red wine sauce with Dauphinoise potatoes and green beans
Tuesday – baby plum tomato sauce with prosciutto and mozzarella over penne
Wednesday – my beloved is making roast chicken – a treat for me!
Thursday – Greek salad with Focaccia bread
Friday – steak and chips – Lidl has sirloin steak for £5.39 for two, very nice.

Wow, for being on the quick and lean, you sure do have some great recipes on the menu. I would have never thought of duck as being quick or easy. Sounds great though!
By the way, if you lived closer, I would buy you a cup of coffee!

I find duck breasts quite easy to make – put them in a cold frying pan skin side down, turn up the heat and cook until the skin is brown then flip over lover heat and put the lid on the pan. They are a bit similar to steak. I must admit they are not always super cheap but our butcher sometimes gives a discount at the end of the day. The dauphinoise is from Lidl, super cheap and just pop in the oven. Vxx
