Last week I went crazy and made a ton of black beans in my slow cooker, so many that I can not put any more in my freezer so it is going to be a rice and bean week. This is not really a bad thing as the beans have no fat in them and are super cheap to make. Here is my black bean slow cooker recipe if you missed it last week.
Monday – Black bean and rice burittos – sorry to be boring but I love them.
Tuesday – Jerk chicken with cucumber salad
Wednesday – Pasta with pancetta and fresh tomato sauce
Thursday – Pan fried fish with salsa verde – I don’t know exactly what kind of fish I am going to use, that depends what looks good and is not expensive.
Friday – Chili and honey chicken with yet more rice and black beans.
Saturday – Big Greek salad with lamb koftas
Sunday – Probably leftovers
