On Saturday, I scored some lovely duck legs for only £1 per leg so that is my luxury items of the week.
Monday – Braised Duck Legs for Idiots with rice – I did not name the recipe but I hope it is true to its name.
Tuesday – Greek Lemon Soup with Chicken – made from Sunday’s roast.
Wednesday – Chickpea Salad with Red Onion and Tomato – I am going to use dried chickpeas made in the slow cooker.
Thursday – Fresh herb and goat’s cheese omelet with salad
Friday – Black beans and yellow rice
Has anyone made stock from duck leg bones? I hate to only get one meal from these legs. Any ideas please drop me a comment.
