Menu Monday 12th March 2012

This week is another frugal one but luckily I some great buys at the market on Saturday including duck legs and fennel.  Also some Italian plum tomatoes to make sauce.

Monday – Five-spice duck legs with roasted fennel and rice. I think I might even try my hand at making duck stock.

Tuesday – Roast Chicken with sweet potato mash and broccoli

Wednesday – Portobello Mushrooms stuffed with Spinach, Quinoa and Pancetta  – I am not using the Merchant  Gourmet quinoa , I am using all generic products, so I have not fallen off the frugal wagon.

Thursday – Penne with fresh tomato chili sauce

Friday – Mexican Black Bean Chili (slow cooker) with jalapeno corn muffins – bounced from last week.
