It is Chinese New Year today – Year of the Dragon which I am taking as very auspicious.   So much so that we are going to Chinatown for dinner.  I have decided to have a bit more fun this year so Chinatown here we come!

Monday – lovely noodles in Chinatown

Tuesday – Chili and honey  pork chops with black beans and yellow rice

Wednesday – Chorizo and butternut squash risotto

Thursday -Curried parsnip and apple soup – I might even attempt to make bread again to go with it.

Friday – Some panfried fish ( whatever is looks good)  with crushed potatoes and veg

Menu Monday 12th September 2011

This is an odd week, I worked yesterday which makes today my Sunday. I feel a bit discombobulated but am happy to have a day to get stuff done without any social stuff interfering.

Last week I posted a menu with Gingered roast chicken with nectarines but I could not find a recipe to give you guys.  My lovely reader, Ketutar, found it for us.  How cool is that? It is the sixth recipe down on the list here.  I don’t have a clay oven anymore but a Dutch oven works perfectly.  The recipe was such a hit, my beloved has requested it again this week.

Monday – Gingered roast chicken with nectarines served with rice with green peas and green beans.

Tuesday – Sausages with puy lentils

Wednesday - Pasta al forno with pumpkin and pancetta with a crisp green salad.  - I can’t wait to make this it looks so moreish.

Thursday – Slow cooker chili with dark chili chocolate and jalapeno cornbread muffins

Friday – Working late – M&S fish cakes with salad – not exactly cooking but cheaper than a takeaway.

Summer is officially at an end with Labor Day and the Bank Holiday, here in the UK, being over so it is back to business at Lean Times HQ. I have lots a cool, exciting posts planned for you, my lovely readers, so stay tuned.

The other big news is I will be blogging over at the super cool Totally Money site so please pop over and have a read.  There are lots of great bloggers on the site from both sides of the ocean with tons of hints and tips.

Monday – Gingered roast chicken with nectarines – this recipe is an old favourite from the book Clay Cookery. I could not find a similar recipe on line so if you would like it please email me and I will send it to you.   I serve it with rice and green beans.

Tuesday – I am out with the Totally Money writers so no cooking for me. Yipee!

Wednesday - Red pepper and courgette(zucchini) fritatta 

Thursday –  Cheese burgers with mini latkes – this is a new obsession that goes with Lidl’s lovely beef that was half price.  Also if I tried to sneak in another veggie meal there might be a mutiny.

Friday - Chilli Tofu with stir fried bok choy

The week we will be eating mostly out of the freezer.  I was made redundant last week and it is going to be a Lean but tasty week.  The photo of the full fridge is a positive image for prosperity.

Monday – Slow cooker chili made last week with jalepeno corn muffins.

Tuesday – Pollock fish cakes with fennel and ginger. – frozen pollock is very reasonable in Lidl.  I am hoping to make quite a few and freeze some.

Wednesday – Black beans and rice topped with chorizo, homemade guacamole, salsa and chips.

Thursday – Spaghetti with prawns, chilli and rocket – frozen prawns half price at Tesco

Friday -  Nigella’s Mexican scrambled eggs – super easy and I will have the ingredients left over from cooking earlier in the week.

Menu Monday 20th June 2011

Once again I am hit with web hosting problems so be kind about the messiness of this post.  I am hoping to change providers very soon but of course everything was fine until I paid a year in advance.  The Lean person in me is having a problem paying another provider and losing almost a whole year’s fees.

On the plus side, there is lots of spring vegetable in the markets that are so much cheaper than in the supermarkets.  Example – one avocado in Sainsburys £1 = 5 – 6 avocados in Portobello Market, so always visit your local market first.

Monday -  My beloved is making roast chicken,  roasted spring vegetables with pine nuts topped with parmesan

Tuesday – Ratatouille with ciabatta bread and cheese

Wednesday – Mexican night – I have just started making guacamole which is lush.  Chicken burittos with black beans.

Thursday -  Experiment – pollock in Panko bread crumbs with salad- I have never done this but I have pollock in the freezer so I will give it a try.

Friday – Cheeseburgers with sweet potato wedges – beloved was not overjoyed at the mostly veg week last week so here is some red meat.

I have planned my cooking this week thinking that it would be warm.  Chilled soup in rainy cold weather is just not the ideal.  Fingers crossed that the weather works with my menu but if not, with a few tweaks I can do some changes.

Monday – Oven-fried Sriracha chicken with new potato salad – make a lot of this chicken as it ai great to take for lunch the next day.

Tuesday – Chunky gazpacho with cheesy pepper biscuits – I made the biscuits on Sunday and if the weather is bad the soup will turn into spicy red pepper soup.

Wednesday – Black bean burritos – made the beans in the slow cooker on Sunday and will  attempt to make guacamole  – does anyone have a recipe they love? Drop me a comment.

Thursday – Courgette (zucchini) and lemon linguine – I might throw in a few prawns to up the protein as this week is a bit meat light.

Friday – Mexican scrambled eggs with black refried beans

Menu Monday 6th June 2011

Over the weekend, my beloved and I have decided to try to go on holiday so we are going to need to do a bit more belt tightening.  I know we are not supposed to even think about a holiday when we are trying to pay off debts but since we have not been away for leisure in almost three years, our exhaustion is speaking a bit louder than our debt. We are hoping that after we recharge our batteries we will come back to hit the ground running.  Why am I telling you all this? Well I have had to search for more food bargains over the weekend.

Lidl has been doing half price specials on weekends. This weekend they had lean ground beef for half price (£1.24 for  500 g)  and red peppers for just 50p each.  The items on special change every week but it is well worth it to check out their website before visiting and if the sale is especially good, get there early as stuff sells out quickly.

Monday – Duck breasts with Moroccan spices served with  fruit and chick pea couscous (on special from local butcher)

Tuesday – Impossibly Easy Taco Pie – I use my own seasoning instead of the Old El Paso one – nicer and cheaper to do your own.

Wednesday- Going to a Meet-up so I will be bringing a sandwich with me.

Thursday – Roast chicken with new potatoes and veg

Friday – Chorizo, red pepper and feta frittata – using some of the potatoes from the previous night.

I will be making red pepper soup to bring for lunch from the Lidl haul.

This has been a bit of a tough time in the life of The Lean Times – I have been having trouble with my service provider and this is the first time I have been able to post in the past week.  I am hoping that it is an onwards and upwards situation after many emails and some cross phone calls.  Fingers crossed that normal service will resume.  Now on to the menu -

Monday – Roasted red pepper soup – lots of great produce but still a bit chilly so summer in a bowl with focaccia bread

Tuesday – Slow cooker chili – bounced from last week.

Wednesday – Chicken thighs braised in garlic and white wine served over rice

Thursday – Greek salad with grilled meat (I need to see what I can get at a bargain)

Friday – Homemade pizza with chorizo and olives

This has been a challenging weekend – my website service provider is having trouble which is impacting on my website, which is why I have not posted my Wednesday post.  I was worried that it would be lost in the ether.

Monday – Panko Shrimp Cakes with Sriracha Aioli – frozen shrimp are half price at Tesco

Tuesday – Roast chicken with saffron orzo and broccolini

Wednesday – Greek salad

Thursday – Slow cooker chili

Friday – Mushroom risotto – wild mushrooms are in season at the moment

Things over here at chez Lean Times have been a bit nuts this week.  There has been good stuff- my beloved has moved in and bad stuff – not getting paid by self important clod of an employer which made the grocery budget very lean indeed.

As I wrote in a post last week, Stock Piling or Hoarding, I have lots of pasta and ground beef stored, so last week when the super lean time hit, we hit the cupboard and freezer.  We ate pasta bolognese then made it into a bake by putting mozzarella on top so it was not the most exciting of weeks food wise and probably not the healthiest but hey s**t happens.  So I will be revisiting some of the meals I wanted make last week, so I apologise for being boring.

Monday – Celebration of moving dinner (surrounded by boxes) – roast chicken, mashed potatoes with White Truffle oil and green beans

Tuesday – I am at Blog club so my beloved is sorting out the boxes and having pizza

Wednesday – White bean fritters over greens – so sorry to have missed last week

Thursday – Pork steaks with chili and honey, black beans and rice.

Friday – Oven Fried Sriracha chicken with salad

No pasta or ground beef this week, yippeee!

After writing about Stockpilling last week, I am doing a bit of inventory control on the cupboards and the freezer. I also have a huge amount of parsley in the garden which needs to be used to make room for new plants.

Monday – Lemon and rosemary marinated chicken thighs with new potatoes and broccoli.

Tuesday – White bean fritters over greens

Wednesday  – Pasta with bolognese sauce

Thursday – Pollock in salsa verde – frozen pollock is inexpensive at Lidl £3.79 a kilo.

Friday – Shakshuka – a great recipe of eggs cooked in tomato and pepper sauce/stew

I am hoping this week’s recipes will help with the clear out a bit.

I had a doh/aha moment this weekend; two days a week I work quite late which means dinner doesn’t get served until almost nine o’clock sometimes, which just is not good enough. I plan our meals but don’t always stick to the exact days but move the menu around to suit what I feel like cooking.

I write about productivity and time management as I think they are a part of Personal Finance but don’t always take my own advice, bad Viviana . I have realized that  I might not be using my time as wisely as I thought, especially when it comes to making the dinner.  I have decided to rectify the situation by getting my slow cooker out a lot more.

Slow cookers are great in hot weather as they don’t heat up your kitchen the way an oven does.  They also use less energy which with the cost of electricity going up in June will help the budget a bit.

Now on to the matter at hand, the menu for the week -

Monday – Smoky Braised Chicken and Gnocchi – the gnocchi on the pasta shelf has more potato and is cheaper than the ones in the chiller cabinet.

Tuesday – Chili made in the slow cooker, making extra for the freezer

Wednesday – Crunchy garlic chicken with new potato salad

Thursday – Chana Masala served with rice and garlic nan bread

Friday – Shrimp Scampi – I have shrimp in the freezer from the last time they were on sale. Super quick recipe.
