Dear lovely readers, I am sorry that I have been MIA for the past almost two months. I have had a few changes in life that forced me to take a break from The Lean Times.
I have taken a full time job to help me get back to zero after being made redundant last year. What I didn’t know is the full time job is full time plus; I am actually doing about four different jobs all rolled into one long day, but such is life when we are in a recession. Now I am back at with super organized attitude and lots of ideas for posts.
On with the menu –
Monday – Butternut squash risotto with pan fried sea bass and runner beans. I am making enough risotto to take for lunch for a two days this week.
Tuesday – Tacos with homemade guacamole and salsa.
Wednesday – Black beans and rice
Thursday – Out at Meetup
Friday – Oven fried Sriracha pork chops with black beans
