We were very lucky in the UK this Easter weekend, it is a four day weekend and it appears that summer has arrived early. To take advantage of the sunshine, which if you know the weather here, it could change at any minute, I am going to do easy cooking this week.
Monday – Invited out with friends which is a great start to the week.
Tuesday – Chicken and bacon salad made from the leftover chicken from Easter Sunday.
Wednesday – Black bean burittos – slow cooker black beans from the freezer
Thursday – Lamb steaks with Greek salad. – Three meats for Â£10 at Tesco.
Friday – Slow Cooker BBQ Pulled Pork
