This coming weekend is Bank Holiday in England, which signifies the end of summer. It has not been the hottest of summers which makes me sad that I did not make some of my favourite foods like gazpacho.
I am hoping for a balmy September to give me another chance at true summer fare.
Monday – Guinea fowl with peppers served with giant couscous
Tuesday – Tortellini with homemade pesto and peas
Wednesday – Slow cooker chili with jalapeno corn muffins – bounced from last week
Thursday – Panko shrimp cakes – these have become a favourite at Lean HQ – cheap to make if you get the shrimp at Lidl
Friday – Aubergine Parmesan AKA Eggplant Parmesan – I grew up making and eating this as my Dad grew more eggplants than we could ever eat.
