Menu Monday 20th February 2012

This week we are still in the mist of an austerity drive.  I had a job cancel on my last week so money is tight.

The good news is that I did extremely well at the market on Saturday.  I got 3kg of potatoes for £1 and 1.5kg of ground beef for £2.50 and a big bag of onions.  Which means the theme for this week is frugally creative.

Monday – Mince and Tatties – this a Scottish recipe which was apparently a big part of my man’s childhood.

Tuesday – Spanish tortilla with chorizo and tomato salad

Wednesday – Creamy mac and cheese – I think I might add a drop of truffle oil for a bit of luxury.

Thursday – Butternut squash and barley risotto – bounced from last week

Friday – Cheeseburgers with caramelized onions and potato latkes.
