Menu Monday 19th September 2011

I did not have much office work last week so money is a bit down therefore I am going to try live extra lean this week.  I am working four days this week and a full week next so I need to do some serious planning as I bring my lunch everyday. We are going to eat a lot from the freezer and make extra so I can bring leftovers for lunch.

Monday – Chicken with 40 cloves of garlic with rice, green beans and french bread to soak up the lovely juices

Tuesday – out for the evening  – freezer chili when I get home

Wednesday – Pan fried duck breasts (bought on sale) with Israeli couscous with roast butternut squash and preserved lemon. I will put pomegranate seeds in too. Making extra take for lunch with some rocket.

Thursday – Rocket (arugula) spaghetti with lemon and percorino romano cheese

Friday – cheese burgers with potato latkes and salad – our new quick go to meal. The latkes (small potato cakes) are 2 for 1 at Tesco.

  1. You should try it, the garlic comes out very mellow and turns almost into a paste so you can spread it on bread. This recipe is sometimes called Mother In Law’s chicken.
