We are zooming up to the holiday season so I am planning on making food that is easy to freeze and heat up as a snack after a party or a hard day of navigating the shops. This is the lull before the storm of Christmas.

Monday – Roast chicken with saffron orzo and green beans

Tuesday – Roasted and curried butternut squash soup – I am making a big batch for the freezer. With Parmesan muffins.

Wednesday - Steak (yes steak, the butcher had a special) with dauphinoise potatoes and salad

Thursday – Going to the blogger/freelancer Xmas party – will have butternut squash soup when I get home.

Friday- Fish cakes with salad

Necessary Sacrifice

Today is Thanksgiving, my favourite of all the holidays.  I like it even more than my birthday or Christmas.

This Thanksgiving,  I am terrifically sad.  I have lost one of my oldest and dearest friends a few weeks ago and I am not able to go to the memorial service which is this weekend in NY.

The problem is I have followed my head, financially, and now my heart is crumbling.  Right now is the first time since I was made redundant in July that I am getting enough freelance work to actually make some headway on my debt. If I did go to NY for the memorial and the holiday, I might have lost the freelance work and be in a much more desperate situation.

To be honest, I did not even have enough for the airfare until last week’s pay.  I know in my head that I need to clear my debts and build an emergency fund but that does not make my heart hurt any less.

I hope all you lovely readers will cherish their loved ones this holiday as you never know what is around the corner.  Please forgive me for my sentimentality.  Alice, there is a hole in my heart.  Thank you for being my friend for so many decades.  RIP.

This is a sad week for me as it is Thanksgiving and I can not get home to see my family. Unfortunately needs must so I am staying in London and making the best of it. I am not going to attempt to make a Thanksgiving dinner when I get hom from work at 7pm but I am be treated to a dinner out by my beloved.

Monday – Gingered Nectarine Roast Chicken with rice and green beans – I got 6 nectarines for 39p at Waitrose, I couldn’t resist.

Tuesday – Meetup so will bring two lunches to work

Wednesday - Mushroom ravioli with mushroom and pancetta sauce

Thursday – Happy Thanksgiving!!!! – I think we will be eating steak, not very traditional but turkey late at night is a bit heavy and steak is more of a treat.

Friday – Pan fried duck breast with red wine sauce with parsnip puree

When Greed is Good

No I’m not Gordon Gekko but I did get your attention didn’t?

I’ve been living  frugally and not making enough money to actually live the good life for quite a while. It has been about a year of scrabbling to find the money to pay my basic living expenses.  Finding work has been an uphill struggle in this recession or shall I say depression and making enough to make ends meet had been a  daily challenge.

Now for the first time in what seems like the longest year, I’m actually making enough money to start making headway on  my debt  and I might even be able to put something a little aside for myself. I am thrilled about the situation but is bought a funny side effect – I actually want to make more money. I have turned greedy.

I think I lost some of my hope constantly struggling to make money and to find ways to make ends meet. Even with the great support I get all my lovely readers of this blog and especially my beloved,  I still felt my spirit being crushed every time a bill came in.

It is still very hard to be optimistic when you just don’t think there’s any money to be found. Then low and behold, one day you get some work that actually pays enough to cover your bare living expenses and you start to be able to breathe again. Now that I have money coming in, I seem more open to other opportunities. My creativity is returning and I don’t have the urge to sit in front of the tv every night because that is all I can afford to do.

Just knowing that there is some money coming in makes me think clearer.  I didn’t realize how beaten I had felt, it was just me trying my best.  Now I can’t say I will not be in the same position of just getting by again; my new work is a temporary situation that might last up to six months. But I do have my hope back and an putting an effort into clearing debts and putting money aside for a proper emergency fund so if I am without substantial work  again for a bit, hopefully it will not be as soul destroying.

We are trying to eat a bit more vegetarian this week.  This has not come about on purpose but because my lovely butcher is a too successful and sold out of  almost everything by noon on Saturday. I am not sure my beloved will be thrilled with less meat on the table but I am going to make a roast chicken to satisfy his meat cravings.

 

Monday – Pasta with fresh cherry tomato sauce and mozzarella

Tuesday – Roast chicken with  potatoes and green vegetables

Wednesday – Butternut squash gnocchi with mushroom sauce

Thursday – White bean stew with chorizo and any leftover chicken from Tuesday

Friday – being taken out for a curry – YUM!

Budgeting and how to stick to it!

We all try to be super precise when noting down our spending and a lot of the time we end up underestimating the amounts. Unless you have the time to go through every single receipt, it’s worth adding a bit extra to what you spend when you draw up your budget.

Think about your morning coffee that costs £1.89 – perhaps round it up to £2 and you can save the extra. Or if you know you usually spend around £60 on petrol every month, perhaps leave enough room for £70, in case you need it.

A realistic budget has room for the unexpected and fun –  lunch with someone you haven’t seen for ages, your favourite band getting back together for a gig, wedding invitations. You may have a section of your budget called ‘bills’, ‘car expenses’ or ‘household items’. Add one called fun. I have said in the past that is it important to budget for fun.  We can’t be serious all the time, that would be exhausting. And if nothing fun pops up for a few weeks – put that money into savings, or call your mate who you haven’t seen for a while.

Unfortunately, rather ‘un-fun’ things come out of the blue too – dental work,your cat gets sick, your hairdryer finally exploding so you have to go to work with crazy hair…every budget needs a contingency plan for the bad things that can happen in life too.

You could take some of the stress out budgeting each day by using a budgeting bank account. It accounts for all your bills and monthly essential costs. It’s still important to keep on top of your daily spending too, but if you think a budgeting bank account could help, you can have a look here for more information.

How to stick to your budget

Set goals. Having the vague idea that you want to ‘save money’ is a bit wishy-washy. Set a clear goal with a reward in mind to keep you motivated: “I can save / repay XX amount by XX date which means I can do XX.” Use your budget to help you work this out.

As long as your budget is realistic, there’s no reason why you can’t stick to it, although you’ll need a bit of willpower. Be prepared for other people to tempt you to spend too!

Real friends won’t expect you to get into debt or spend what you can’t afford on a social life, but if you make no effort to see them, they will think you are a bore. It is worth telling close friends why budgeting is important to you and suggest cheaper activities. You don’t have to tell them if you’re in debt – just say you’re saving up for something amazing!

Start a savings account. Often when people give up smoking, they put the money they would have spent on smoking into savings. Watching their money grow can help ex-smokers stay motivated. Start to put the money you save into a bank account. If you’re repaying debt, keep a record of how much you have repaid. Every few weeks or months, add up the total you’ve repaid and be proud of how hard you’ve worked.

So draw up a budget, set yourself some spending goals and ask friends to keep you motivated, put the money you save into a savings account and watch it grow! As soon as you start seeing some results for your hard work, your motivation will double. It’s not easy sticking to a budget – but who said anything worthwhile was easy?

This week we are going to try to eat vegetarian a few times a week. I don’t think my beloved will be overjoyed but I am going to give it a shot. I got some beautiful red peppers for a song at the market on Saturday so there will be pasta and soup.

Monday – Pasta with peppers and mozzarella

Tuesday – Lemon roast chicken with rice and broccoli

Wednesday – Roasted red pepper soup

Thursday – going to a pub opening so hopefully feasting on nibbles

Friday – Citrus baked Pollock with new potatoes and green beans

A ‘Glamourous’ Problem

If you have been reading my recent posts, you will know that I am freelancing a few days a week at Glamour magazine.  It is a nice place to work with lovely people so what is the problem?  The problem is I have been working in a light industrial office or at home in very casual clothing aka pj’s. Now that I am working in the (cough) Fashion Department, I need to smarten up, pronto.

I am not a big shopper, actually I am a women that doesn’t really like to shop if you can believe it. I prefer to work from a capsule wardrobe, a few pieces that integrate well.  If you want to put together a capsule wardrobe, may I suggest you buy the best quality pieces you can afford.

The last thing you want is one of your key items to fall apart.A capsule is a slightly tricky thing to organize the first consideration is your colour palette. If you know what colours suit your skin tone then you are less likely to make basic mistakes. I stick to black, navy, caramel (beige makes me look dead) with touches of red and white.

Avoid prints in you clothing, save them for accessorizing. When you wear prints people are more likely to remember you repeating an item which won’t happen with a classic black dress that you change the look of with a coloured cardigan, a scarf, or jewelry.

I have taken stock of what I have and thanks to clever shopping on eBay, I have a few designer pieces to make my basics look ‘fashiony’.  I do need a new pair of boots, I am thinking about a wedge from Office and maybe a new dress or two.

My game plan is to hit the shops, after leisurely viewing their websites to pin point my favourites then make a list of the items I want to buy. But don’t buy when you are in the store, note what you like and what size fits you then go home make a cup of tea and fire up your computer again.
There are a few reasons for not buying in the shop – you are giving yourself a cooling off period so you don’t buy in haste, and you can save more money buy shopping on line.   Before buying a single item, I go to Google and look for vouchers or cash back from the site I am looking to buy from.  Not all sites are affiliated with vouchers but you would be surprised how many are.
I am a fan of All Saints, who frequently give cash back via Quidco, as do Office, Boden, Debenhams, New Look and even the high fashion site MyWardrobe.  I do not make Quidco my only stop when looking for discounts – I will compare voucher sites to see if I can get a better deal.  I also look at MyVoucherCodes and any other sites that pop up.

Happy Halloween!  How scary is this kitty?  No it is not my Vegas as he would not let me get within an inch of him with a stencil.

Last week, I survived quite well on the £10 Week Challenge but now my cupboards are bare and since I have started a new freelancing gig, my bank account will not see much money until a week from Friday.  Boo hiss, I was looking to take my beloved out for a meal for putting up with me during the £10 Challenge. Alas we must carry on.

Monday – My beloved is cooking and I have no idea what he will present

Tuesday – It is London Blogger Meetup so I will try to grab something on the road.

Wednesday – Slow cooker tacos with black beans from the freezer.

Thursday – Spaghetti Carbonara  with a crisp salad

Friday – Pan fried duck breast with red currant and port reduction with potatoes an green vegetables – hopefully someone will pay me by then.

Lessons Learned from the £10 Week Challenge

We are rapidly approaching the end point for the £10 Week Challenge which I found a thought provoking experience.  I did not find the not spending difficult at all.  I try to keep my larder, fridge and freezer pretty equipped and since I do my meal plan based on what I have bought at the market on Saturday, I had all my dinners prepared.

I was thrown a bit of a curve ball by (happily) getting some freelance work at Glamour magazine so I needed to rethink my lunches.  Normally I work two days a week in an office with a microwave and as much coffee and biscuits as the Cookie Monster could consume so not spending when there is a breeze.

At Glamour, there is no microwave, fridge or coffee making facilities so I had to think of a plan that I would not blow my budget. I bought my lunch with Boots points, not very nice but it filled me up and I drank Diet Coke to satisfy my caffeine addiction. I must say I did hit the nice coffee when I got home in the evenings.  I did have one free coffee on a Cafe Nero loyalty card I found on my desk.

So all in all, I survived pretty well on the money front, where I fell down was the tv restrictions and the tasks.  I found out that I really missed turning the tv on for light entertainment when I got home from work.  On Thursday night, I was so tired that I turned into a zombie and watched three hours of fluff but it did relax me.  I did not realize how dependent I am on tv. I am now going to restrict my tv watching, allowing myself only to watch programs that I am really interested in.  A by product of the £10 Challenge, we now have a radio in the living room/kitchen which will stop me putting on the tv.

As for the tasks,  I am going to do some mending today and attempt to tidy the big cupboard.  I don’t think I will be putting anything on eBay this weekend but maybe next weekend.  A challenge is a brilliant way to have a look at your habits whether it is take out coffees, tv watching or going to the pub.

£10 Week Challenge, the Finish Line is in Sight

Today I am at day five of the £10 week challenge, what a relief! Actually, all in all, it is not too bad.  I don’t spend a huge amount of money during the week, where I freelance there is absolutely nothing in the area so there are no temptations. I bring my lunch and they kindly provide coffee and biscuits.

So when I was planning my £10 week, I thought it would be a cake walk as far as daily spending goes, then a spanner was thrown in the works – I have been asked to freelance at Glamour magazine an additional two days a week.  Life at Glamour is very different from my other freelance gig, first of all it is based in Mayfair, the mecca of all shopping and it has no free coffee or biscuits and no kitchen to heat up lunch.  Basically it is not very fashion to brown bag it and when you are the new girl you have to play the part to a certain extent.

So what have I spent so far? Here is the list:

1 Yoga bunny drink 99p

1 reserved library book 50p

1 bag of rocket 99p

1 Pret Coffee £1.99 which brings me to the grand total of £4.47

Thank goodness for my Boots points with which I am buying my lunch and the Cafe Nero card, I grabbed off my beloved that has a free coffee on it.

The part of the challenge that I found the most difficult should have been the easiest – the cutting back on tv.  I was doing really well up to last night.  I had only used two of my allotted six (I traded two films for three more hours of tv) then I was so tired from doubling my work load, I turned into a zombie and watched three hours.  Now I only have one hour left and that is allocated to the finale of Project Runway. I might try to find an audio book to listen to instead of having the tv on.

I do still have some projects to get through before the challenge ends on Sunday – I need to clean out the big cupboard and do some mending for my beloved.  Otherwise it looks like my weekend will be filled with work that I did not get to over the week.

This week there is a group of us that are aiming to spend £10 ($16) or less.  The £10 week is the brain child of the lovely Penny Golightly. If you fancy joining in the guidelines are here. This is not a challenge for the faint hearted, you must use your willpower against takaway coffees and fashion magazines.  You must also be productive and not spend your time watching mindless tv.

Monday- Impossibly easy bacon cheeseburger pie with salad – I am going to substitute pancetta for bacon.

Tuesday – We are going out, I have a Groupon for a steak dinner

Wednesday – Spaghetti with pancetta and sauteed cherry tomatoes

Thursday – I am home alone so it will probably be fridge foraging.

Friday – White bean and chorizo stew  – if I am not working I might attempt to make some bread to go with it.
