Eat like a peasant

Food prices have gone up, that is a fact, so now is the time to rethink how we cook. Meat does not have to be the hero of a meal other cultures use it as a flavouring.

Expand your thinking into other cuisines. I am not saying to be a vegetarian or to live on pasta but we forget about other sources of protein such as beans and eggs.

There are so many fantastic peasant recipes in different cuisines; Italian risotto, Mexican anything, stir fries and my new favourite Spanish cuisine.

The Spanish love to use chorizo as flavouring instead of the main source of protein. Chorizo is great paired with beans, and tinned tomatoes then you have a hearty meal. Here is a recipe for just such a stew. Serve this with crusty bread and even a hungry man will be satisfied. You can even add some leftover roast chicken to make it even meatier.

The other great Spanish mainstay is tortilla, a kind of omelette with potatoes, serve with a green salad and there is a meal. Here is a recipe. You can also eat tortilla cold in a sandwich which makes a great exotic packed lunch. You can also put different things in your tortilla – peppers, ham perhaps some cheese. I know it will not be authentic but it is an easy way to clean out the refrigerator.

Another great hearty meal is rice and beans. There is a plethora of rice and bean recipes on the internet with millions of variations from South American versions to Caribbean versions to the South of the USA versions. Wikipedia has done a little overview of the history of the dish which is quite interesting.

Sexy Packed Lunches

Apparently it takes 21 days of repetition to make a habit so I am trying to make a habit of bringing my lunch to work.  I know the only way to make this work is to find fabulous recipes that don’t take ages in the morning and are as lovely as getting food on the outside.

I have figured that I spend between £3 – £7 per day on getting so so food from outlets such as Pret a Manger. Now do the math  – that means at the top end I am spending £140 a month on food that really does not rock my world; so what is the point? I want to save money but still enjoy myself so I am not going to be totally rigid about bringing my lunch. I have decided that maybe once a fortnight I will allow myself a lunch date with a friend.

I started bringing my lunch this week and it did not go too badly -

On Sunday I prepped; made homemade pesto and gazpacho.  With a food processor it took all of 1.5 hours.   I made so much that I froze two portions of pesto and a big tub of gazpacho.

I guess all this cooking is making me a Food Savings Account.  The more I cook the more I will have in my freezer to pull out in a moment’s notice.  I will be a domestic goddess in a few weekends!

Tuesday night I attempted to bake savoury muffins and having not baked more than chocolate chip cookies, they did not turn out the fabulous light morels they were supposed to. I have revisited Delia’s recipe; I think I know where I went wrong so am going back into the kitchen.

A side benefit, I am finding by coming home to cook and add to my Food Savings Account is a sense of accomplishment.  I am not sitting in front of the tv watching reruns of Sex and the City, but it is on in the background but while I listen to dialogue I have hear a hundred times before,  I am making food.  It is a great feeling when you can look in your freezer and see lots of delicious food that you made, not some factory. No trans-fats or preservative worries.

I will be posting my list of Sexy Packed Lunches as soon as I work out the kinks in the recipes and am satisfied that they are sexy and as good as getting food on the outside.  I am a bit picky so please be patient.

Make food while the sun is shinning

This past Saturday was one of if not the best weather day of the summer.  So what did I do?  Go shopping of course!  I went all over Portobello in search of produce that I can freeze to give me a taste of summer in the darkest days of winter.

My first two cooking adventures were a basil pesto and a rocket (or if you are in the US argula) pesto. They are both so easy to make and freeze well. You can even freeze them in ice cube trays for easy portion sizes.

My other big batch cooking is going to be gazpacho.  I am hoping to freeze some but will probably end up taking it to work for lunch with a piece of cheese.
