Menu Monday 6th September 2010

mealplanmonday_v1These past couple of weeks have been incredibly hectic so I must apologize for neglecting my lovely readers.  I had dedicated every extra minute to working on my once a year sideline, just to have it not work out.  What does this information mean to Menu Monday this week, you ask, well it means we are eating on the extra cheap and from the freezer.

Monday – Chicken and mushroom rissotto, chicken leftover from a roast

Tuesday – Spaghetti with Roasted Tomatoes

Wednesday -Ratatouille – this is the perfect frugal dish for the end of summer produce

Thursday – Chili from the freezer

Friday – Simply Fish (bought on sale) with ratatouille

Saturday – Chili, honey pork steaks with black beans and yellow rice

Sunday – I will be taking inventory of the cupboards and freezer, who knows what I will find.

This is most likely my busiest week of the year as I will be doing my regular work and preparing my big yearly sideline in the evenings.  I am tired already.  Therefore this week, I am going to try to be healthy but quick with lots from the freezer.  Bless the person that invented the freezer.

Monday – Pasta with fresh baby plum tomato and  prosciutto sauce

Tuesday – Black bean (from the freezer) burrito

Wednesday – Roast chicken with orzo and vegetables

Thursday – Simply Fish (bought on sale last week) with new potatoes and salad

Friday- Everything chicken salad – the whole crisper will be put in to make space in the fridge

Saturday – Will be working in the kitchen all day so I am going to cheat and put a pizza in the oven with salad – real cooking will just not be possible with the time and space constaints.

Sunday – Notting Hill Carnival! Jerk chicken with the works

mpm121Since it has suddenly gotten chilly and I did not have a chance to hit Portobello vegetable market – this week is going to be an eat the freezer week.  I might have a change of heart about my menu if the weather realizes that it is August and not October. Fingers crossed on that one.

Sunday Cooking – Chili in the slow cooker – a lot of this will be decanted into one portion containers and frozen

Monday – Chili with rice

Tuesday -  Another portion of Simply Fish (bought on sale) with green beans

Wednesday – Quick omelette with tomato and basil salad before going out

Thursday -Honey, chili and lime pork chops with black beans and rice

Friday – Chili again

Saturday – Greek Lamb with orzo

Sunday – depends what I get when I hit the market on Saturday
