Menu Monday 6th September 2010

mealplanmonday_v1These past couple of weeks have been incredibly hectic so I must apologize for neglecting my lovely readers.  I had dedicated every extra minute to working on my once a year sideline, just to have it not work out.  What does this information mean to Menu Monday this week, you ask, well it means we are eating on the extra cheap and from the freezer.

Monday – Chicken and mushroom rissotto, chicken leftover from a roast

Tuesday – Spaghetti with Roasted Tomatoes

Wednesday -Ratatouille – this is the perfect frugal dish for the end of summer produce

Thursday – Chili from the freezer

Friday – Simply Fish (bought on sale) with ratatouille

Saturday – Chili, honey pork steaks with black beans and yellow rice

Sunday – I will be taking inventory of the cupboards and freezer, who knows what I will find.

Menu Monday 12th July 2010

mealplanmonday_v2This week is looking very busy, more days in an office so less time to get stuff done.   It is time to be extra hyper organized.  Easy food needed.

Monday – Greek Salad with roast chicken thighs

Tuesday – Pasta with marinated tomatoes and mozzarella

Wednesday – Chicken with nectarines and rice, this recipe is for a clay pot but I am going to try it in the slow cooker.  My clay pot did not agree with my new oven and cracked.

Thursday – Betty Crapper’s pizza dough with roasted peppers and goat’s cheese

Friday – Rice and slow cooker black bean burrittos

Saturday – Prawn madras with rice – frozed prawns half price at Tesco, a treat.

Sunday – Day out with the family so no cooking.

Summertime Debt Free Time

sunflowerI think the summer is the best time to start a plan to get your finances in order.  Why summer and not in January when most people make resolutions? In the summer with all the sunshine things seem a bit better, more hopeful even, so what better time to sit down and take a long hard look at your finances.  There are other reasons that summer is a good time to work on cutting back.

Here is a little list:

1. It stays light longer so you can really cut your electricity bill.

2. Since it is lighter much later you can stay outside and not watch TV.  Cut your cable tv down to the bare essential channels and you will be acclimated to less channels by the time the nights start closing in.

3. Fresh fruit and vegetables are less expensive so you can eat better while cutting your food costs. Hit your local farmer’s market. Watch out for a summer food post next week.

4. Cut back on your public transporation by walking more.

5.  In the same vein, quit the gym and find an outdoor exercise to do.

6. January is just plain depressing with the physical and financial hangover of Christmas. Who can face a total financial revamp in that gloom.  It is so much better to lay the groundwork in the sunshine then you will have your good habits in place by the autumn.
