These past couple of weeks have been incredibly hectic so I must apologize for neglecting my lovely readers. I had dedicated every extra minute to working on my once a year sideline, just to have it not work out. What does this information mean to Menu Monday this week, you ask, well it means we are eating on the extra cheap and from the freezer.
Monday – Chicken and mushroom rissotto, chicken leftover from a roast
Tuesday – Spaghetti with Roasted Tomatoes
Wednesday -Ratatouille – this is the perfect frugal dish for the end of summer produce
Thursday – Chili from the freezer
Friday – Simply Fish (bought on sale) with ratatouille
Saturday – Chili, honey pork steaks with black beans and yellow rice
Sunday – I will be taking inventory of the cupboards and freezer, who knows what I will find.
This week is looking very busy, more days in an office so less time to get stuff done. It is time to be extra hyper organized. Easy food needed.
I think the summer is the best time to start a plan to get your finances in order. Why summer and not in January when most people make resolutions? In the summer with all the sunshine things seem a bit better, more hopeful even, so what better time to sit down and take a long hard look at your finances. There are other reasons that summer is a good time to work on cutting back.
